Description

A chilled, creamy seafood pasta salad featuring crab and shrimp, perfect for summer gatherings.


Ingredients

  • 8 oz pasta (rotini or penne)
  • 1 cup cooked crab meat
  • 1 cup cooked shrimp, peeled and deveined
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup celery, diced
  • 1/4 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water until cool.
  2. Combine the cooked pasta, crab meat, shrimp, cherry tomatoes, red onion, and celery in a large bowl.
  3. Whisk together the mayonnaise, olive oil, lemon juice, salt, and pepper in a small bowl until smooth.
  4. Dress the salad by pouring the dressing over the pasta mixture and toss gently to combine.
  5. Garnish with fresh parsley before serving and chill in the refrigerator for at least 30 minutes.

Notes

Use high-quality crab meat for enhanced flavor. Greek yogurt can substitute mayonnaise for a lighter version.
