Ingredients

- 1 cup pitted dates
- 1/2 cup sesame seeds
- 1/4 cup almond flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Coconut flakes (optional for coating)
Instructions
- In a food processor, combine the pitted dates, sesame seeds, almond flour, salt, and vanilla extract.
- Process until the mixture is sticky and well combined.
- Scoop out tablespoons of the mixture and roll them into small balls.
- If desired, roll the balls in coconut flakes.
- Place the bites on a plate and refrigerate for at least 30 minutes to set.
- Serve chilled and enjoy!
Notes
Store leftovers in an airtight container for up to one week or freeze for up to three months. Use fresh, soft dates for best texture and consider adding spices for flavor variations.
