Description

Ingredients

  • 1 lb sausage (Italian or your choice)
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 bell pepper (diced)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil
  • Chopped parsley for garnish (optional)

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the diced sausage and cook until browned.
  2. Remove the sausage from the skillet and set it aside.
  3. Add the diced onions, bell pepper, and minced garlic to the skillet and sauté until softened, about 3-4 minutes.
  4. Stir in the rice, cooked sausage, diced tomatoes, chicken broth, paprika, and a sprinkle of salt and pepper.
  5. Increase the heat to bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes.
  6. Remove the lid and fluff the rice gently with a fork.
  7. Garnish with chopped parsley if desired and serve hot.

Notes

For added depth of flavor, consider using smoked sausage or adding spices like cayenne. This dish can be customized with different vegetables.
