Description

A vibrant stir-fry featuring shrimp, asparagus, and mushrooms, bursting with flavor and perfect for a quick weeknight dinner.


Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, cut into 2-inch pieces
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  3. Gently add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
  4. Now it’s time to add the asparagus and mushrooms to the skillet. Stir-fry them together for about 3-4 minutes until the veggies are tender but still crisp.
  5. Pour in the soy sauce, and season with salt and pepper. Give everything a good stir to combine the flavors.
  6. Allow the stir-fry to cook for an additional minute until everything is beautifully coated in sauce.
  7. Serve hot, garnished with sesame seeds if desired.

Notes

Shrimp can be substituted with firm tofu or tempeh for a vegetarian version.
