A vibrant stir-fry featuring shrimp, asparagus, and mushrooms, bursting with flavor and perfect for a quick weeknight dinner.

- 1 lb shrimp, peeled and deveined
- 1 bunch asparagus, cut into 2-inch pieces
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Gently add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
- Now it’s time to add the asparagus and mushrooms to the skillet. Stir-fry them together for about 3-4 minutes until the veggies are tender but still crisp.
- Pour in the soy sauce, and season with salt and pepper. Give everything a good stir to combine the flavors.
- Allow the stir-fry to cook for an additional minute until everything is beautifully coated in sauce.
- Serve hot, garnished with sesame seeds if desired.
Notes
Shrimp can be substituted with firm tofu or tempeh for a vegetarian version.
