- 4 large potatoes, peeled and diced
- 1 lb smoked sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Place the diced potatoes, sliced sausage, chopped onion, and minced garlic in the slow cooker.
- Pour in the chicken broth and add Cajun seasoning, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- Stir in the heavy cream about 30 minutes before serving.
- Serve hot, topped with chopped green onions.
Notes
Feel free to use frozen pre-diced potatoes for quicker prep. You can also substitute different smoked sausages or make it vegetarian by omitting the sausage.
