Description

A comforting and hearty soup made with creamy potatoes and smoky sausage, bursting with Cajun flavors.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Place the diced potatoes, sliced sausage, chopped onion, and minced garlic in the slow cooker.
  2. Pour in the chicken broth and add Cajun seasoning, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  4. Stir in the heavy cream about 30 minutes before serving.
  5. Serve hot, topped with chopped green onions.

Notes

Feel free to use frozen pre-diced potatoes for quicker prep. You can also substitute different smoked sausages or make it vegetarian by omitting the sausage.
