Description
A comforting quiche with a crispy mashed potato crust, filled with eggs, cheese, and fresh vegetables.

- 2 cups mashed potatoes
- 2 tablespoons olive oil
- 1/2 cup onion, chopped
- 1 cup bell peppers, chopped
- 6 large eggs
- 1/2 cup milk
- 1 cup cheese (cheddar or your choice)
- Salt and pepper to taste
- Optional: cooked bacon or sausage, spinach
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the mashed potatoes and olive oil until smooth.
- Press the mixture into the bottom and up the sides of a greased pie dish to form a crust.
- Bake the potato crust for about 15-20 minutes until slightly golden.
- In a skillet, sauté the onion and bell peppers until soft, then set aside.
- Whisk together the eggs, milk, salt, and pepper.
- Add the sautéed vegetables and cheese to the egg mixture.
- Pour the egg mixture into the baked potato crust.
- Bake in the oven for an additional 25-30 minutes, or until the center is set.
- Allow to cool slightly before slicing. Serve warm.
Notes
For a Mediterranean twist, try adding olives and sun-dried tomatoes. Customize your fillings to suit your preferences.
