Description

A comforting quiche with a crispy mashed potato crust, filled with eggs, cheese, and fresh vegetables.


Ingredients

  • 2 cups mashed potatoes
  • 2 tablespoons olive oil
  • 1/2 cup onion, chopped
  • 1 cup bell peppers, chopped
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage, spinach

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the mashed potatoes and olive oil until smooth.
  3. Press the mixture into the bottom and up the sides of a greased pie dish to form a crust.
  4. Bake the potato crust for about 15-20 minutes until slightly golden.
  5. In a skillet, sauté the onion and bell peppers until soft, then set aside.
  6. Whisk together the eggs, milk, salt, and pepper.
  7. Add the sautéed vegetables and cheese to the egg mixture.
  8. Pour the egg mixture into the baked potato crust.
  9. Bake in the oven for an additional 25-30 minutes, or until the center is set.
  10. Allow to cool slightly before slicing. Serve warm.

Notes

For a Mediterranean twist, try adding olives and sun-dried tomatoes. Customize your fillings to suit your preferences.
