- 2 cups shredded sharp cheddar cheese
- 1 cup shredded smoked gouda cheese
- 3 cups milk
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat your smoker to 250°F (121°C).
- Cook the macaroni according to package directions until al dente, then drain and set aside.
- In a saucepan, melt butter over medium heat and whisk in the flour to form a smooth roux.
- Gradually pour in the milk while whisking continuously until the mixture thickens.
- Stir in garlic powder, onion powder, salt, and pepper, then add the shredded cheddar and gouda cheese, stirring until melted.
- Combine the cheese sauce with the cooked macaroni, mixing well.
- Pour the macaroni and cheese mixture into a smoker-safe dish.
- Optionally, sprinkle breadcrumbs on top.
- Smoke the macaroni and cheese for about 1 hour, stirring halfway through.
- Serve warm and enjoy.
Notes
Don’t skip the smoking as it makes all the difference in flavor. Ensure the pasta is cooked al dente for the best texture.
