Description

A comforting dish of macaroni and cheese elevated with a delightful smoky flavor from sharp cheddar and creamy smoked gouda.


Ingredients

  • 8 oz elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded smoked gouda cheese
  • 3 cups milk
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your smoker to 250°F (121°C).
  2. Cook the macaroni according to package directions until al dente, then drain and set aside.
  3. In a saucepan, melt butter over medium heat and whisk in the flour to form a smooth roux.
  4. Gradually pour in the milk while whisking continuously until the mixture thickens.
  5. Stir in garlic powder, onion powder, salt, and pepper, then add the shredded cheddar and gouda cheese, stirring until melted.
  6. Combine the cheese sauce with the cooked macaroni, mixing well.
  7. Pour the macaroni and cheese mixture into a smoker-safe dish.
  8. Optionally, sprinkle breadcrumbs on top.
  9. Smoke the macaroni and cheese for about 1 hour, stirring halfway through.
  10. Serve warm and enjoy.

Notes

Don’t skip the smoking as it makes all the difference in flavor. Ensure the pasta is cooked al dente for the best texture.
