- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup fresh cilantro, chopped
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 tablespoon olive oil
- 1–2 chipotle peppers in adobo sauce, chopped
- 1 cup corn (optional)
Instructions
- In a bowl, combine ground beef, breadcrumbs, cilantro, egg, garlic, chili powder, cumin, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, heat olive oil over medium heat. Add onion and bell pepper, sauté until softened.
- Add beef broth, diced tomatoes, and chipotle peppers to the pot, bringing it to a boil.
- Gently add the meatballs to the stew, reduce heat to a simmer, and cook for about 20-25 minutes until meatballs are cooked through.
- If using, add corn and cook for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro if desired.
Notes
For extra flavor, pan-sear the meatballs before adding to the stew. Adjust chipotle peppers for desired heat level.
