Description

A heartwarming Smoky Mexican Meatball Stew filled with tender meatballs, vibrant veggies, and smoky chipotle flavors.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh cilantro, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 tablespoon olive oil
  • 12 chipotle peppers in adobo sauce, chopped
  • 1 cup corn (optional)

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, cilantro, egg, garlic, chili powder, cumin, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, heat olive oil over medium heat. Add onion and bell pepper, sauté until softened.
  3. Add beef broth, diced tomatoes, and chipotle peppers to the pot, bringing it to a boil.
  4. Gently add the meatballs to the stew, reduce heat to a simmer, and cook for about 20-25 minutes until meatballs are cooked through.
  5. If using, add corn and cook for an additional 5 minutes.
  6. Serve hot, garnished with fresh cilantro if desired.

Notes

For extra flavor, pan-sear the meatballs before adding to the stew. Adjust chipotle peppers for desired heat level.
