Description

A comforting and satisfying lasagna made with smoky cheese, lentils, and vibrant vegetables, perfect for vegetarians and meat-lovers alike.


Ingredients

  • 9 lasagna noodles
  • 1 cup lentils, cooked
  • 2 cups spinach, chopped
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 2 cups marinara sauce
  • 1 cup smoked cheese, shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet and sauté onion and garlic until translucent.
  3. Add diced zucchini and red bell pepper, seasoning with salt, pepper, smoked paprika, and Italian seasoning. Cook until tender.
  4. Stir in cooked lentils and chopped spinach, cooking until spinach wilts.
  5. Spread marinara sauce in a baking dish and layer three lasagna noodles on top.
  6. Spoon half of the veggie-lentil mixture over noodles, sprinkle with smoked cheese, and add another marinara layer. Repeat, finishing with noodles and marinara.
  7. Top with remaining smoked cheese.
  8. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes.
  9. Let sit for 10 minutes before slicing and serving.

Notes

For a spicy kick, add crushed red pepper flakes. Can freeze well—just cover tightly to prevent freezer burn.
