- 9 lasagna noodles
- 1 cup lentils, cooked
- 2 cups spinach, chopped
- 1 zucchini, diced
- 1 red bell pepper, diced
- 2 cups marinara sauce
- 1 cup smoked cheese, shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet and sauté onion and garlic until translucent.
- Add diced zucchini and red bell pepper, seasoning with salt, pepper, smoked paprika, and Italian seasoning. Cook until tender.
- Stir in cooked lentils and chopped spinach, cooking until spinach wilts.
- Spread marinara sauce in a baking dish and layer three lasagna noodles on top.
- Spoon half of the veggie-lentil mixture over noodles, sprinkle with smoked cheese, and add another marinara layer. Repeat, finishing with noodles and marinara.
- Top with remaining smoked cheese.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes.
- Let sit for 10 minutes before slicing and serving.
Notes
For a spicy kick, add crushed red pepper flakes. Can freeze well—just cover tightly to prevent freezer burn.
