- 1/4 cup mayonnaise
- 1/2 cup breadcrumbs (or crushed saltine crackers)
- 1 large egg
- 1/4 cup finely diced onion

- 1/2 teaspoon paprika
- 1/2 teaspoon Old Bay seasoning (optional)
- 1 tablespoon chopped fresh parsley (or 1 teaspoon dried)
- Salt and pepper, to taste
- 1 tablespoon lemon juice
- 1/2 cup vegetable oil (for frying)
Instructions
- Mix the Base: In a large bowl, combine the drained and flaked salmon, mayonnaise, breadcrumbs (or crushed saltines), the egg, finely diced onion, garlic powder, paprika, Old Bay seasoning (if using), parsley, salt, and pepper. Mix until everything is well combined.
- Shape the Patties: Using your hands, shape the mixture into 6 to 8 evenly-sized patties. If the mixture feels too wet, sprinkle in a little more breadcrumbs until it holds together nicely.
- Heat the Oil: In a large skillet, heat the vegetable oil over medium heat until shimmering.
- Fry the Patties: Carefully add the salmon patties to the hot oil. Fry for about 3-4 minutes per side, or until they are beautifully golden brown and crispy.
- Drain Excess Oil: Once fried, use a slotted spatula to remove the patties from the skillet and place them on a paper towel-lined plate to drain off any excess oil.
- Serve With Flair: Serve your delicious salmon patties hot, garnished with lemon wedges and a side of tartar sauce or your favorite dipping sauce.
