- 2 cups cooked rice
- 1 cup cooked chicken, shredded
- 1 cup shredded cheese (cheddar or your choice)
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and bell pepper, sauté until soft.
- Stir in the minced garlic and cook for another minute.
- Add the cooked rice and shredded chicken to the skillet, mixing well.
- Pour in the soy sauce, stirring to combine all ingredients.
- Add the shredded cheese, stirring until melted and well combined.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, stirring occasionally.
- Garnish with green onions if desired, and serve hot.
Notes
Use leftover rotisserie chicken for added flavor and ease. Experiment with different cheeses and add veggies for extra nutrition.
