Description

A comforting and easy-to-make fried rice that combines Southern flavors with tender chicken and melted cheese.


Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, sauté until soft.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the cooked rice and shredded chicken to the skillet, mixing well.
  5. Pour in the soy sauce, stirring to combine all ingredients.
  6. Add the shredded cheese, stirring until melted and well combined.
  7. Season with salt and pepper to taste.
  8. Cook for an additional 2-3 minutes, stirring occasionally.
  9. Garnish with green onions if desired, and serve hot.

Notes

Use leftover rotisserie chicken for added flavor and ease. Experiment with different cheeses and add veggies for extra nutrition.
