Description

Delicious bite-sized cornbread poppers perfect for brunch or as a snack, adorned with a honey-butter glaze.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/2 cup corn kernels (optional)
  • Honey (for glaze)
  • Butter (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  2. Combine the cornmeal, flour, sugar, baking powder, and salt.
  3. Whisk together the buttermilk, eggs, and melted butter.
  4. Mix the wet and dry ingredients until just combined; fold in corn kernels if desired.
  5. Fill each muffin tin about 2/3 full with the batter.
  6. Bake for 15-20 minutes until golden brown.
  7. Prepare the honey butter glaze by melting butter and mixing in honey.
  8. Glaze the warm poppers with the honey butter right after baking.

Notes

For extra moisture, substitute half of the buttermilk with Greek yogurt. Avoid overmixing to ensure fluffy poppers.
