- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup melted butter
- 1/2 cup corn kernels (optional)
- Honey (for glaze)
- Butter (for glaze)
Instructions
- Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
- Combine the cornmeal, flour, sugar, baking powder, and salt.
- Whisk together the buttermilk, eggs, and melted butter.
- Mix the wet and dry ingredients until just combined; fold in corn kernels if desired.
- Fill each muffin tin about 2/3 full with the batter.
- Bake for 15-20 minutes until golden brown.
- Prepare the honey butter glaze by melting butter and mixing in honey.
- Glaze the warm poppers with the honey butter right after baking.
Notes
For extra moisture, substitute half of the buttermilk with Greek yogurt. Avoid overmixing to ensure fluffy poppers.
