Description

Delicious bite-sized cornbread poppers glazed with honey butter, perfect for any gathering.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1/4 cup butter (for glazing)

Instructions

  1. Preheat your oven to 400°F (200°C) and generously grease a mini muffin tin to ensure those poppers slide out easily.
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Give it a good whisk to ensure everything is evenly mixed.
  3. Whisk together the milk, eggs, and melted butter in another bowl until well combined and slightly frothy.
  4. Gently fold the wet ingredients into the dry mix. Mix until just combined—you want the batter to be slightly lumpy.
  5. Using a spoon, carefully fill each mini muffin cup about two-thirds full with batter.
  6. Place the muffin tin in the preheated oven and bake for about 12-15 minutes or until golden brown and a toothpick inserted comes out clean.
  7. While the poppers are baking, melt the remaining butter in a small saucepan over low heat. Stir in the honey until fully combined.
  8. Once the poppers are done, remove them from the oven and brush the warm honey butter glaze generously over each one. Serve warm and enjoy!
