Description

A vibrant salad featuring tender grilled chicken, fresh vegetables, and a flavorful balsamic vinaigrette.


Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • Balsamic vinaigrette, for dressing

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix together olive oil, paprika, garlic powder, cumin, salt, and pepper.
  3. Coat the chicken breasts with the spice mixture.
  4. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  5. Remove the chicken and let it rest for a few minutes.
  6. In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  7. Top the salad with sliced grilled chicken.
  8. Drizzle with balsamic vinaigrette and serve immediately.

Notes

For extra flavor, marinate the chicken overnight. Great served with white wine or lemonade.
