Description

A vibrant bowl filled with crispy spinach falafel, creamy hummus, and mixed greens, celebrating freshness and nutrition.

Ingredients

Scale
  • 1 cup cooked chickpeas
  • 1 cup fresh spinach
  • 1/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon cumin
  • 1/4 teaspoon coriander
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons flour (or chickpea flour)
  • Oil for frying
  • 1 cup hummus
  • 2 cups mixed greens
  • Toppings (e.g., cucumber, tomato, olives)

Instructions

  1. In a food processor, combine chickpeas, spinach, onion, garlic, cumin, coriander, salt, pepper, and flour. Pulse until the mixture is well combined but not pureed.
  2. Form the mixture into small balls, about the size of a golf ball.
  3. Heat oil in a pan over medium heat and fry the falafel balls until golden brown on all sides.
  4. Place mixed greens in a bowl, add falafel, top with hummus and desired toppings.

Notes

For a gluten-free option, use chickpea flour exclusively. Ensure oil is hot enough for frying.
