Description

A warm and cheesy squash casserole filled with flavor and nostalgia, perfect for any meal.


Ingredients

  • 3 cups yellow squash, sliced
  • 1 onion, chopped
  • 2 cups cheddar cheese, shredded
  • 1 cup sour cream
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil water in a large pot and add the sliced squash and chopped onion, cooking until tender.
  3. Combine the cooked squash and onion with cheddar cheese, sour cream, beaten eggs, and seasonings in a mixing bowl.
  4. Pour the mixture into a greased baking dish.
  5. Sprinkle breadcrumbs and dabs of butter on top.
  6. Bake for 30-35 minutes until bubbly and golden.
  7. Serve warm and enjoy!
