- 3 cups yellow squash, sliced
- 1 onion, chopped
- 2 cups cheddar cheese, shredded
- 1 cup sour cream
- 2 eggs, beaten
- 1 cup breadcrumbs
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- Preheat your oven to 350°F (175°C).
- Boil water in a large pot and add the sliced squash and chopped onion, cooking until tender.
- Combine the cooked squash and onion with cheddar cheese, sour cream, beaten eggs, and seasonings in a mixing bowl.
- Pour the mixture into a greased baking dish.
- Sprinkle breadcrumbs and dabs of butter on top.
- Bake for 30-35 minutes until bubbly and golden.
