Description

A hearty and satisfying breakfast hash featuring crispy potatoes, tender steak, and perfectly cooked eggs.


Ingredients

  • 2 large potatoes, diced
  • 1 lb steak, diced
  • 4 eggs
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Paprika (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes to the skillet and cook until golden and tender, about 10-15 minutes.
  3. Sauté the chopped onion until softened.
  4. Push the potatoes and onion mixture to one side of the skillet.
  5. Add the diced steak to the empty side and sear until browned, about 5-7 minutes.
  6. Crack the eggs on top of the steak and hash, cover, and cook until the whites are set but the yolks are still runny, around 4-5 minutes.
  7. Season with salt, pepper, and a sprinkle of paprika if desired.
  8. Serve garnished with fresh parsley.
