- 2 large potatoes, diced
- 1 lb steak, diced
- 4 eggs
- 1 onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Paprika (optional)
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced potatoes to the skillet and cook until golden and tender, about 10-15 minutes.
- Sauté the chopped onion until softened.
- Push the potatoes and onion mixture to one side of the skillet.
- Add the diced steak to the empty side and sear until browned, about 5-7 minutes.
- Crack the eggs on top of the steak and hash, cover, and cook until the whites are set but the yolks are still runny, around 4-5 minutes.
- Season with salt, pepper, and a sprinkle of paprika if desired.
- Serve garnished with fresh parsley.
