Description

A comforting and flavorful ginger loaf cake that brings back memories of family gatherings, perfect for tea time or dessert.


Ingredients

  • 1 cup molasses
  • 1/2 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Cream together the brown sugar and softened butter until light and fluffy.
  3. Stir in the molasses and eggs until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, spices, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
