- 1 cup molasses
- 1/2 cup unsalted butter, softened
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon

- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Cream together the brown sugar and softened butter until light and fluffy.
- Stir in the molasses and eggs until well combined.
- In a separate bowl, whisk together the flour, baking soda, spices, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Serves well with whipped cream or vanilla ice cream, and can be stored at room temperature for several days.
