Description

A delightful and simple Strawberry Box Cake that combines fresh strawberries with a box cake mix, topped with luscious strawberry frosting.


Ingredients

  • 1 box vanilla cake mix
  • 3 large eggs
  • 1 cup water
  • 1 cup fresh strawberries, chopped
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons strawberry puree
  • 1 tablespoon milk
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the cake mix, eggs, water, melted butter, and chopped strawberries in a large bowl. Mix until well combined.
  3. Divide the batter evenly between the prepared cake pans.
  4. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Let the cakes cool in the pans for 10 minutes, then remove them and allow to cool completely on wire racks.
  6. Cream together the softened butter and powdered sugar for the frosting. Add strawberry puree and milk until desired consistency is reached.
  7. Place one cake layer on a serving plate, spread frosting on top, then add the second layer and frost the sides and top.
  8. Garnish with fresh strawberries and serve.

Notes

Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
