Description
A delightful and simple Strawberry Box Cake that combines fresh strawberries with a box cake mix, topped with luscious strawberry frosting.

- 1 box vanilla cake mix
- 3 large eggs
- 1 cup water
- 1 cup fresh strawberries, chopped
- 1/2 cup unsalted butter, melted
- 2 cups powdered sugar
- 1/4 cup unsalted butter, softened
- 2 tablespoons strawberry puree
- 1 tablespoon milk
- Fresh strawberries for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Combine the cake mix, eggs, water, melted butter, and chopped strawberries in a large bowl. Mix until well combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove them and allow to cool completely on wire racks.
- Cream together the softened butter and powdered sugar for the frosting. Add strawberry puree and milk until desired consistency is reached.
- Place one cake layer on a serving plate, spread frosting on top, then add the second layer and frost the sides and top.
- Garnish with fresh strawberries and serve.
Notes
Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.
