Description

Deliciously soft and chewy cookies filled with strawberries and cream cheese, reminiscent of a cheesecake.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 ounces cream cheese, softened
  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Combine the flour, baking powder, and salt in a bowl until evenly mixed.
  3. Cream the softened butter, granulated sugar, and brown sugar until creamy and well blended.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the flour mixture to the wet ingredients and mix until just combined.
  6. Beat together the cream cheese and powdered sugar until smooth and creamy.
  7. Fold the chopped strawberries into the cookie dough.
  8. Scoop out dough onto the baking sheet and create a small indentation in each scoop.
  9. Fill each indentation with the cream cheese mixture and cover slightly with more dough.
  10. Bake for 12-15 minutes until the edges are golden brown.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store leftover cookies in an airtight container at room temperature for up to 3 days. They can be frozen for up to 3 months.
