Description
Deliciously soft and chewy cookies filled with strawberries and cream cheese, reminiscent of a cheesecake.

- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 3 ounces cream cheese, softened
- 1/2 cup fresh strawberries, chopped
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Combine the flour, baking powder, and salt in a bowl until evenly mixed.
- Cream the softened butter, granulated sugar, and brown sugar until creamy and well blended.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- Beat together the cream cheese and powdered sugar until smooth and creamy.
- Fold the chopped strawberries into the cookie dough.
- Scoop out dough onto the baking sheet and create a small indentation in each scoop.
- Fill each indentation with the cream cheese mixture and cover slightly with more dough.
- Bake for 12-15 minutes until the edges are golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store leftover cookies in an airtight container at room temperature for up to 3 days. They can be frozen for up to 3 months.
