- 1 lb ground beef
- 1 cup rice
- 3 bell peppers, chopped
- 1 can diced tomatoes
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the chopped onion and minced garlic in a large skillet with a splash of olive oil over medium heat until softened.
- Brown the ground beef in the skillet until nicely cooked, draining excess fat.
- Combine the rice, chopped bell peppers, and diced tomatoes. Season with salt and pepper and let flavors meld.
- Transfer the mixture to a greased casserole dish and spread evenly. Top with shredded cheese.
- Bake covered with aluminum foil for 30 minutes.
- Add the final touch by removing the foil and baking for an additional 10-15 minutes until cheese is bubbly and golden brown.
- Cool slightly before serving.
