Description

A comforting and hearty Stuffed Pepper Casserole that combines ground beef, rice, and vibrant bell peppers under a golden melted cheese blanket.

Ingredients

Scale
  • 1 lb ground beef
  • 1 cup rice
  • 3 bell peppers, chopped
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the chopped onion and minced garlic in a large skillet with a splash of olive oil over medium heat until softened.
  3. Brown the ground beef in the skillet until nicely cooked, draining excess fat.
  4. Combine the rice, chopped bell peppers, and diced tomatoes. Season with salt and pepper and let flavors meld.
  5. Transfer the mixture to a greased casserole dish and spread evenly. Top with shredded cheese.
  6. Bake covered with aluminum foil for 30 minutes.
  7. Add the final touch by removing the foil and baking for an additional 10-15 minutes until cheese is bubbly and golden brown.
  8. Cool slightly before serving.

Notes

Pairs well with a fresh green salad or garlic bread. Can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
