- 1 cup oats
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the pitted dates in a food processor until smooth.
- Combine the oats, almond flour, melted coconut oil, vanilla extract, baking soda, and salt; blend until well mixed.
- Fold in nuts or chocolate chips if desired.
- Scoop tablespoon-sized amounts of the cookie dough onto the prepared baking sheet.
