Description

Indulge in these deliciously chewy, sugar-free cookies made with Medjool dates, oats, and almond flour for a wholesome snack.


Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup oats
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional: nuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the pitted dates in a food processor until smooth.
  3. Combine the oats, almond flour, melted coconut oil, vanilla extract, baking soda, and salt; blend until well mixed.
  4. Fold in nuts or chocolate chips if desired.
  5. Scoop tablespoon-sized amounts of the cookie dough onto the prepared baking sheet.
  6. Bake for 10-12 minutes or until the edges are golden.
