- 2 chicken breasts
- 1 cup sundried tomatoes (chopped)
- 2 cups fresh spinach
- 1 cup heavy cream
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat the skillet: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Season and sear the chicken: Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side.
- Set the chicken aside: Once cooked, remove the chicken from the skillet and set aside.
- Create the flavor base: In the same skillet, add sundried tomatoes, cream, oregano, and basil. Stir to combine and let simmer for 3-4 minutes.
- Wilt the spinach: Add fresh spinach to the sauce and cook until wilted.
- Return the chicken: Return the chicken to the skillet and coat it with the sauce.
- Serve hot: Serve hot with pasta, rice, or veggies for a complete meal.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat.
