Description

A delightful dish combining the earthy sweetness of sundried tomatoes and fresh spinach in a rich and creamy sauce.


Ingredients

  • 2 chicken breasts
  • 1 cup sundried tomatoes (chopped)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the skillet: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Season and sear the chicken: Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side.
  3. Set the chicken aside: Once cooked, remove the chicken from the skillet and set aside.
  4. Create the flavor base: In the same skillet, add sundried tomatoes, cream, oregano, and basil. Stir to combine and let simmer for 3-4 minutes.
  5. Wilt the spinach: Add fresh spinach to the sauce and cook until wilted.
  6. Return the chicken: Return the chicken to the skillet and coat it with the sauce.
  7. Serve hot: Serve hot with pasta, rice, or veggies for a complete meal.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat.
