Description

Ingredients

  • 1 cup sweet potatoes, cooked and mashed
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 1/2 cup milk
  • Cooking spray or butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish with cooking spray or butter.
  2. In a large bowl, mix together the mashed sweet potatoes, cottage cheese, rolled oats, brown sugar, vanilla extract, cinnamon, nutmeg, eggs, and milk until well combined.
  3. Pour the sweet potato mixture into the prepared baking dish, spreading it evenly.
  4. Bake in the preheated oven for 30-35 minutes or until the top is golden and set.
