Description

Ingredients

  • 2 medium sweet potatoes
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped herbs (like parsley and cilantro)
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • 1 egg (optional)
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Peel and cube the sweet potatoes.
  2. Boil them until tender, then drain and mash (about 15 minutes).
  3. In a bowl, mix the mashed sweet potatoes with breadcrumbs, herbs, onion, garlic, and egg (if using). Season with salt and pepper.
  4. Form the mixture into patties.
