Ingredients

- 2 medium sweet potatoes
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped herbs (like parsley and cilantro)
- 1/4 cup diced onion
- 1 clove garlic, minced
- 1 egg (optional)
- Salt and pepper to taste
- Oil for frying
Instructions
- Peel and cube the sweet potatoes.
- Boil them until tender, then drain and mash (about 15 minutes).
- In a bowl, mix the mashed sweet potatoes with breadcrumbs, herbs, onion, garlic, and egg (if using). Season with salt and pepper.
- Form the mixture into patties.
- Heat oil in a skillet over medium heat and fry the patties until golden brown on both sides.
- Serve warm and enjoy!
