Description

A cozy and moist sweet potato pound cake, perfect for autumn gatherings and indulgent moments.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time. Stir in the vanilla extract and the mashed sweet potatoes until well incorporated.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the sweet potato mixture, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a sweeter cake, you can increase the sugar by 1/4 cup, or add nuts or raisins for added texture. Store in an airtight container for up to 3 days.
