Description

Ingredients

  • 1 tablespoon oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 2 cups potstickers (frozen or homemade)
  • 2 cups fresh spinach
  • 1 red bell pepper, sliced
  • 2 carrots, sliced
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Heat the oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  3. Pour in vegetable broth and coconut milk; stir in red curry paste. Bring to a simmer.
  4. Add potstickers, bell pepper, and carrots; cook for about 5-7 minutes until potstickers are heated through.
  5. Stir in fresh spinach and cook until wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with cilantro for a touch of freshness.

Notes

For a spicier flavor, increase the amount of red curry paste or add chili flakes. Store leftovers in an airtight container for up to 3 days.
