Ingredients

- 8 ounces mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso, cooled
- 1 cup cocoa powder
- 1 cup chocolate chips
Instructions
- Beat the mascarpone cheese until smooth.
- Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Fold the whipped cream into the mascarpone mixture gently.
- Prepare the espresso dipping station by dipping cookies into the cooled espresso.
- Roll the truffles in cocoa powder and place them on a plate.
- Drizzle melted chocolate chips over the truffles.
- Chill the truffles in the refrigerator for at least an hour before serving.
