Ingredients

- 1 block of firm tofu
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1 cup spinach, chopped
- 1 teaspoon turmeric
- Salt and pepper to taste

Instructions
- Press the tofu to remove excess moisture, then crumble it into a bowl.
- Heat olive oil in a pan over medium heat.
- Add diced onion and bell pepper, cooking until soft.
- Stir in the crumbled tofu and turmeric, cooking for about 5-7 minutes.
- Add chopped spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve in a bowl and top with optional toppings like avocado, nutritional yeast, or salsa.
