Description

A vibrant and soul-warming Thai soup featuring shrimp, mushrooms, and aromatic herbs in a spicy and sour broth.

Ingredients

  • Shrimp
  • Mushrooms
  • Lemongrass
  • Kaffir lime leaves
  • Galangal
  • Bird chilies
  • Coconut milk (optional)
  • Water or broth
  • Fish sauce
  • Lime juice
  • Fresh cilantro

Instructions

  1. Bring water or broth to a boil. Add lemongrass, kaffir lime leaves, galangal, and bird chilies. Boil for about 5-10 minutes to infuse the flavors.
  2. Add shrimp and mushrooms to the pot and cook until the shrimp turns pink and the mushrooms are tender.
  3. Stir in fish sauce and lime juice to taste, bringing the soup to life with vibrant flavors.
  4. If desired, add coconut milk for a creamier texture, creating an exquisite balance in the broth.
  5. Remove from heat, garnish with fresh cilantro, and serve hot.

Notes

Fresh herbs are key! Adjust the heat by varying the number of bird chilies used.
