Description

A savory twist on the classic French dessert, this Tomato Tarte Tatin showcases caramelized tomatoes in a flaky puff pastry, celebrating the flavors of summer.


Ingredients

  • 1 sheet puff pastry
  • 68 medium tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat. Add the halved tomatoes, cut side down, and cook until they begin to caramelize.
  3. Sprinkle sugar, salt, and pepper on the tomatoes, and drizzle with balsamic vinegar.
  4. Cook for about 10-15 minutes, then remove from heat.
  5. Place the puff pastry over the tomatoes, tucking the edges down into the pan.
  6. Bake in the preheated oven for about 25-30 minutes, or until the pastry is golden brown.
  7. Allow to cool slightly before inverting onto a serving plate.
  8. Garnish with fresh basil leaves and serve warm.

Notes

To enhance the sweetness of the tomatoes, use ripe, in-season varieties. Leftovers can be stored in an airtight container for up to 3 days.
