- 1 sheet puff pastry
- 6–8 medium tomatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon sugar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat the olive oil over medium heat. Add the halved tomatoes, cut side down, and cook until they begin to caramelize.
- Sprinkle sugar, salt, and pepper on the tomatoes, and drizzle with balsamic vinegar.
- Cook for about 10-15 minutes, then remove from heat.
- Place the puff pastry over the tomatoes, tucking the edges down into the pan.
- Bake in the preheated oven for about 25-30 minutes, or until the pastry is golden brown.
- Allow to cool slightly before inverting onto a serving plate.
- Garnish with fresh basil leaves and serve warm.
Notes
To enhance the sweetness of the tomatoes, use ripe, in-season varieties. Leftovers can be stored in an airtight container for up to 3 days.
