Description

A heartwarming casserole made with yellow squash, creamy cheddar cheese, and topped with buttery Ritz crackers.


Ingredients

  • 4 medium yellow squashes, sliced
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed Ritz crackers
  • 3 eggs, beaten
  • Salt and pepper to taste
  • Butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the sliced yellow squash and chopped onion until soft.
  3. Combine the cooked squash and onion with shredded cheddar cheese, sour cream, beaten eggs, salt, and pepper.
  4. Grease a casserole dish with butter.
  5. Pour the mixture into the greased casserole dish.
  6. Top with crushed Ritz crackers and drizzle melted butter if desired.
  7. Bake for about 30-35 minutes until golden and bubbly.
  8. Cool slightly before serving.
