- 4 medium yellow squashes, sliced
- 1 onion, chopped
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup crushed Ritz crackers
- 3 eggs, beaten
- Salt and pepper to taste
- Butter for greasing
Instructions
- Preheat the oven to 350°F (175°C).
- Sauté the sliced yellow squash and chopped onion until soft.
- Combine the cooked squash and onion with shredded cheddar cheese, sour cream, beaten eggs, salt, and pepper.
- Grease a casserole dish with butter.
- Pour the mixture into the greased casserole dish.
- Top with crushed Ritz crackers and drizzle melted butter if desired.
- Bake for about 30-35 minutes until golden and bubbly.
- Cool slightly before serving.
