Description

A nostalgic pineapple upside down cake topped with caramelized sugar and juicy pineapples, bringing comfort and sweetness in every bite.


Ingredients

  • 1 can pineapple rings
  • 1/4 cup butter
  • 3/4 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Melt the butter and pour it into the bottom of the greased pan. Sprinkle with brown sugar.
  3. Arrange the pineapple rings on top of the brown sugar mixture.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. In another bowl, whisk together the granulated sugar, milk, vegetable oil, vanilla extract, and eggs until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, folding until just combined.
  7. Pour the batter over the arranged pineapple in the cake pan.
  8. Bake for about 30-35 minutes, until a toothpick comes out clean.
  9. Allow the cake to cool for about 10 minutes before inverting it onto a serving plate.
