- 1 can pineapple rings
- 1/4 cup butter
- 3/4 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 2 large eggs
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Melt the butter and pour it into the bottom of the greased pan. Sprinkle with brown sugar.
- Arrange the pineapple rings on top of the brown sugar mixture.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- In another bowl, whisk together the granulated sugar, milk, vegetable oil, vanilla extract, and eggs until smooth.
- Gradually add the dry ingredients to the wet ingredients, folding until just combined.
- Pour the batter over the arranged pineapple in the cake pan.
- Bake for about 30-35 minutes, until a toothpick comes out clean.
- Allow the cake to cool for about 10 minutes before inverting it onto a serving plate.
Notes
Store leftovers in an airtight container. It can be served with whipped cream or ice cream.
