- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 tablespoon cornstarch
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 cup fresh pineapple, diced
- 1/2 cup passion fruit pulp
Instructions
- Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
- In a clean bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, continuing to beat until glossy and stiff peaks form.
- Gently fold in the vanilla extract, vinegar, and cornstarch with a spatula.
- Spoon the meringue onto the prepared baking sheet, shaping it into a circle with a slight indent in the center.
- Bake for about 90 minutes until the outside is crisp and dry. Once done, turn off the oven and let the meringue cool completely inside.
- Once cooled, whip the heavy cream with the powdered sugar until soft peaks form.
- Spread the whipped cream over the cooled meringue, then top generously with diced pineapple and passion fruit pulp.
- Serve immediately and enjoy!
