Wholesome vegan flapjacks made with oats, dates, and walnuts, perfect for a healthy snack or on-the-go breakfast.
Ingredients

- 1 cup rolled oats
- 1 cup pitted dates, chopped
- 1/2 cup walnuts, chopped
- 1/2 cup almond butter or peanut butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 180°C (350°F) and line an 8-inch square baking tin with parchment paper.
- In a mixing bowl, combine the rolled oats, chopped dates, walnuts, and cinnamon.
- In a saucepan, gently heat the almond butter, maple syrup, vanilla extract, and salt until smooth.
- Pour the wet mixture over the dry mixture and mix until well combined.
- Firmly press the mixture into the prepared baking tin.
- Bake for 20-25 minutes, or until the top is golden.
- Allow to cool before cutting into bars.
Notes
For a nut-free version, use sun butter instead of almond butter.
