Description

This Vegan Lemon Pepper Glazed Cauliflower features crispy florets coated in a tangy, sweet glaze, making it a delightful side dish or main course.


Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup (or agave syrup)
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, salt, and black pepper.
  3. Spread the florets on a baking sheet in a single layer and roast for 25-30 minutes.
  4. Combine garlic, lemon juice, soy sauce, maple syrup, and red pepper flakes in a small saucepan.
  5. Heat over medium heat until the sauce thickens slightly.
  6. Transfer roasted cauliflower back to a bowl and toss in the lemon pepper glaze.
  7. Garnish with fresh parsley or cilantro before serving.

Notes

For maximum crispiness, roast the cauliflower just before serving. Adjust garlic or red pepper flakes to suit your taste.
