Description

A comforting Vegetable Stew with fluffy Herby Dumplings, perfect for warming your heart and home during chilly days.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 potatoes, diced
  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup milk

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until they turn translucent.
  2. Add the sliced carrots, chopped celery, diced potatoes, chopped zucchini, and bell pepper. Cook for about 5 minutes.
  3. Pour in the vegetable broth, add the dried thyme and rosemary, and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for about 20 minutes.
  4. In a separate bowl, mix the flour, baking powder, and salt. Stir in the chopped parsley and milk until just combined.
  5. Drop spoonfuls of the dumpling batter onto the surface of the stew. Cover the pot and let it simmer for another 15 minutes.
  6. Serve hot, garnished with fresh parsley if desired.
