- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 potatoes, diced
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup fresh parsley, chopped
- 1/2 cup milk
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until they turn translucent.
- Add the sliced carrots, chopped celery, diced potatoes, chopped zucchini, and bell pepper. Cook for about 5 minutes.
- Pour in the vegetable broth, add the dried thyme and rosemary, and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for about 20 minutes.
- In a separate bowl, mix the flour, baking powder, and salt. Stir in the chopped parsley and milk until just combined.
- Drop spoonfuls of the dumpling batter onto the surface of the stew. Cover the pot and let it simmer for another 15 minutes.
- Serve hot, garnished with fresh parsley if desired.
