  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup fresh herbs (e.g., parsley, chives), chopped
  • 1/2 cup milk
  • 2 tablespoons butter, melted

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add Vegetables: Toss in the sliced carrots, diced potatoes, chopped zucchini, and bell pepper; cook for about 5 minutes until they start to soften.
  3. Simmer with Broth: Pour in the vegetable broth and stir in the dried thyme, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes until the vegetables are tender.
  4. Prepare Dumpling Batter: Meanwhile, prepare the dumplings: In a bowl, combine the flour, baking powder, and salt. Stir in the chopped herbs, milk, and melted butter until everything is well combined.
