- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup bell peppers, chopped
- 1 cup zucchini, chopped
- 1 cup carrots, chopped
- 1 cup spinach, chopped
- 1 can black beans, drained and rinsed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon olive oil
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse quinoa under cold water and combine it with vegetable broth in a medium pot. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is cooked.
- Combine cooked quinoa, chopped vegetables, black beans, garlic powder, onion powder, salt, and pepper in a large bowl. Mix well until everything is evenly incorporated.
- Transfer the mixture to a greased baking dish. Drizzle with olive oil and sprinkle cheese on top if using.
- Bake for 25-30 minutes until the vegetables are tender and the top is golden brown.
