Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice vermicelli noodles
  • 1 cup lettuce leaves
  • 1 cup fresh herbs (mint, cilantro, basil)
  • 1 cup sliced vegetables (carrots, cucumber, bell pepper)
  • Rice paper wrappers
  • Peanut sauce or hoisin sauce for dipping

Instructions

  1. Cook the rice vermicelli noodles according to the package instructions, then drain and cool.
  2. Soften the rice paper wrapper by dipping it in warm water for about 10 seconds until pliable.
  3. Lay the softened wrapper flat on a clean surface.
  4. In the center, layer shredded chicken, vermicelli noodles, lettuce, fresh herbs, and sliced vegetables.
  5. Fold the sides of the wrapper over the filling and roll tightly from the bottom to the top.
  6. Repeat with remaining wrappers and fillings.
  7. Serve with peanut sauce or hoisin sauce for dipping.
