- 1 cup rice vermicelli noodles
- 1 cup lettuce leaves

- 1 cup sliced vegetables (carrots, cucumber, bell pepper)
- Rice paper wrappers
- Peanut sauce or hoisin sauce for dipping
Instructions
- Cook the rice vermicelli noodles according to the package instructions, then drain and cool.
- Soften the rice paper wrapper by dipping it in warm water for about 10 seconds until pliable.
- Lay the softened wrapper flat on a clean surface.
- In the center, layer shredded chicken, vermicelli noodles, lettuce, fresh herbs, and sliced vegetables.
- Fold the sides of the wrapper over the filling and roll tightly from the bottom to the top.
- Repeat with remaining wrappers and fillings.
- Serve with peanut sauce or hoisin sauce for dipping.
