Delightful truffles made with a creamy white chocolate base and fresh strawberry puree, perfect for any occasion.

- 8 oz white chocolate, chopped
- 1/2 cup heavy cream
- 1 cup fresh strawberries, pureed
- 1 teaspoon vanilla extract
- 1 cup crushed graham crackers or powdered sugar (for coating)
- Sea salt (optional, for garnish)
Instructions
- Simmer the cream in a saucepan over medium heat until it begins to simmer.
- Remove from heat and add the chopped white chocolate, stirring until melted and smooth.
- Stir in the strawberry puree and vanilla extract until fully combined.
- Refrigerate the mixture for about 2 hours, or until firm.
- Scoop out small balls of the mixture using a melon baller or your hands.
- Roll each truffle in crushed graham crackers or powdered sugar.
- Place the truffles on a baking sheet lined with parchment paper.
- Optionally, sprinkle a little sea salt on top for garnish.
- Refrigerate again until set.
- Serve chilled or at room temperature.
Notes
For an extra smooth mixture, finely chop the chocolate before melting. Adjust the mixture’s firmness by chilling longer if needed.
