Description

A comforting dish of whole baked cauliflower enveloped in a creamy cheese sauce, topped with crispy breadcrumbs.


Ingredients

  • 1 whole cauliflower
  • 2 cups cheddar cheese, grated
  • 1 cup milk
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon mustard powder
  • Salt and pepper to taste
  • Breadcrumbs for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Remove the outer leaves from the cauliflower and trim the stem.
  3. Boil or steam the cauliflower in salted water for about 10 minutes, then drain.
  4. Melt the butter in a saucepan over medium heat. Stir in the flour to create a roux.
  5. Gradually whisk in the milk and cook until the sauce thickens.
  6. Stir in the grated cheese and mustard powder, seasoning with salt and pepper.
  7. Place the cauliflower in a baking dish and pour the cheese sauce over it.
  8. Sprinkle breadcrumbs on top for a crunchy finish.
  9. Bake for 25-30 minutes until the top is golden brown.
  10. Allow to cool slightly before serving.

Notes

For extra cheesy sauce, mix different types of cheese. For a vegan option, substitute with cashew cream and plant-based cheese.
