- 1 whole cauliflower
- 2 cups cheddar cheese, grated
- 1 cup milk
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 teaspoon mustard powder
- Salt and pepper to taste
- Breadcrumbs for topping
Instructions
- Preheat your oven to 375°F (190°C).
- Remove the outer leaves from the cauliflower and trim the stem.
- Boil or steam the cauliflower in salted water for about 10 minutes, then drain.
- Melt the butter in a saucepan over medium heat. Stir in the flour to create a roux.
- Gradually whisk in the milk and cook until the sauce thickens.
- Stir in the grated cheese and mustard powder, seasoning with salt and pepper.
- Place the cauliflower in a baking dish and pour the cheese sauce over it.
- Sprinkle breadcrumbs on top for a crunchy finish.
- Bake for 25-30 minutes until the top is golden brown.
- Allow to cool slightly before serving.
Notes
For extra cheesy sauce, mix different types of cheese. For a vegan option, substitute with cashew cream and plant-based cheese.
