Ingredients

- 1 cup wild rice
- 8 cups vegetable or chicken broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 1 cup heavy cream (optional)
- Fresh parsley for garnish
Instructions
- Rinse the wild rice under cold water to cleanse it of any debris or starch.
- Bring 8 cups of broth to a vigorous boil in a large pot.
- Combine the rinsed wild rice, chopped onion, diced carrots, diced celery, minced garlic, thyme, and rosemary into the pot.
- Simmer gently for about 45 minutes, or until the wild rice is tender.
- Add heavy cream if desired and season with salt and pepper.
- Garnish the soup with fresh parsley before serving.
Notes
For a lighter version, omit the heavy cream. This soup can be stored in the fridge for up to 3 days or frozen for about 3 months.
