Description

A comforting and hearty wild rice soup perfect for chilly days, filled with earthy flavors and vibrant vegetables.


Ingredients

Scale
  • 1 cup wild rice
  • 8 cups vegetable or chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)
  • Fresh parsley for garnish

Instructions

  1. Rinse the wild rice under cold water to cleanse it of any debris or starch.
  2. Bring 8 cups of broth to a vigorous boil in a large pot.
  3. Combine the rinsed wild rice, chopped onion, diced carrots, diced celery, minced garlic, thyme, and rosemary into the pot.
  4. Simmer gently for about 45 minutes, or until the wild rice is tender.
  5. Add heavy cream if desired and season with salt and pepper.
  6. Garnish the soup with fresh parsley before serving.

Notes

For a lighter version, omit the heavy cream. This soup can be stored in the fridge for up to 3 days or frozen for about 3 months.
