- 3 medium zucchini, thinly sliced
- 1 medium onion, diced
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the onion in olive oil until translucent, about 3-4 minutes.
- Cook the sliced zucchini in the skillet until tender, about 5-7 minutes.
- Prepare the cheesy mixture by mixing sour cream, cheddar cheese, garlic powder, salt, and pepper.
- Combine the sautéed zucchini and onion with the cheesy blend.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Add breadcrumbs and sprinkle with grated Parmesan cheese.
- Bake for 25-30 minutes until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
