Description

A comforting Zucchini Squash Casserole that celebrates fresh ingredients with creamy cheese and a crispy topping.


Ingredients

  • 3 medium zucchini, thinly sliced
  • 1 medium onion, diced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the onion in olive oil until translucent, about 3-4 minutes.
  3. Cook the sliced zucchini in the skillet until tender, about 5-7 minutes.
  4. Prepare the cheesy mixture by mixing sour cream, cheddar cheese, garlic powder, salt, and pepper.
  5. Combine the sautéed zucchini and onion with the cheesy blend.
  6. Transfer the mixture to a greased baking dish, spreading it evenly.
  7. Add breadcrumbs and sprinkle with grated Parmesan cheese.
  8. Bake for 25-30 minutes until the top is golden and bubbly.
