- 12 oz pasta (penne or rotini)
- 1 lb chicken sausage, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese, for serving
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet or pot, heat some oil over medium heat. Add the sliced chicken sausage and cook until browned.
- Add the diced onion and minced garlic; sauté until the onion is translucent.
- Stir in the diced tomatoes (with juice), chicken broth, Italian seasoning, and pasta.
- Bring to a boil, then reduce heat and simmer until the pasta is cooked, about 10-12 minutes.
- Season with salt and pepper to taste.
- Serve topped with grated Parmesan cheese and fresh parsley.
