Description

Ingredients

  • 12 oz pasta (penne or rotini)
  • 1 lb chicken sausage, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet or pot, heat some oil over medium heat. Add the sliced chicken sausage and cook until browned.
  2. Add the diced onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the diced tomatoes (with juice), chicken broth, Italian seasoning, and pasta.
  4. Bring to a boil, then reduce heat and simmer until the pasta is cooked, about 10-12 minutes.
  5. Season with salt and pepper to taste.
  6. Serve topped with grated Parmesan cheese and fresh parsley.
