Description

A delightful twist on the classic Almond Joy candy bar, these cookie bars combine rich almond flavors, coconut goodness, and a luscious chocolate topping.


Ingredients

  • 1 cup almond flour
  • 1 cup shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 cup chocolate chips
  • 1/4 cup chopped almonds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). While that warms up, line an 8×8 inch baking dish with parchment paper for easy removal.
  2. In a mixing bowl, combine the almond flour, shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix until all the ingredients are well incorporated and you have a sticky mixture.
  3. Fold in the chopped almonds, ensuring they’re evenly distributed throughout the mixture.
  4. Spread the mixture evenly in your prepared baking dish. Press down firmly with your fingers or a spatula, creating a compact base.
  5. Place the baking dish in the preheated oven. Bake for 20-25 minutes or until the top is golden brown and lightly crisp.
  6. Remove the dish from the oven and allow it to cool completely.
  7. Melt the chocolate chips in a microwave safe bowl or double boiler. Stir until smooth and velvety.
  8. Pour the melted chocolate over the cooled bars and spread evenly. Allow the chocolate to set before cutting them into bars.
