Description

Experience the deep, savory flavors of this traditional Mexican dish, featuring tender beef slow-cooked in a rich broth.


Ingredients

Scale
  • 2 pounds beef chuck roast
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 3 dried guajillo peppers, stemmed and seeded
  • 2 dried ancho peppers, stemmed and seeded
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon thyme
  • 2 bay leaves
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Toast the guajillo and ancho peppers in a skillet until fragrant. Soak them in warm water for 15 minutes, then blend with onion, garlic, cumin, oregano, thyme, and some beef broth until smooth.
  2. Place the beef in a crockpot and pour the blended mixture over it. Add bay leaves and the rest of the beef broth.
  3. Season with salt and pepper.
  4. Cook on low for 480 minutes or until the beef is tender and shreds easily.
  5. Serve the Birria with warm tortillas and enjoy with your favorite toppings.

Notes

For the best flavor, serve Birria hot and consider adding toppings like chopped onions, cilantro, lime wedges, and salsa.
