Ingredients

- 2 lbs oxtail, cut into pieces
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 scallions, chopped
- 1 teaspoon allspice
- 1 teaspoon black pepper
- 1 teaspoon salt
- 2 cups beef broth
- 2 tablespoons soy sauce
- 2 carrots, chopped
- 1 bell pepper, chopped
- 1–2 Scotch bonnet peppers (optional for heat)
- Fresh thyme
- 1 tablespoon brown sugar
Instructions
- Heat vegetable oil in a large pot over medium-high heat. Brown the oxtail pieces on all sides.
- Remove the oxtail and sauté onions, garlic, and scallions until soft.
- Return the oxtail to the pot, then add allspice, black pepper, salt, beef broth, soy sauce, carrots, bell pepper, Scotch bonnet (if using), thyme, and brown sugar.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 180 minutes or until the oxtail is tender.
- Once done, remove the Scotch bonnet pepper, if used. Serve hot with rice and peas or your favorite side.
Notes
Brown the oxtail well for deeper flavor. Adjust spice levels to taste. Let the oxtail sit before serving to settle flavors.
