Instructions
- Combine ground beef, rice, egg, mint, onion, garlic, cumin, salt, and pepper in a large bowl. Shape into small meatballs.
- Bring beef broth and diced tomatoes to a boil in a large pot.
- Add the meatballs, carrots, zucchini, potato, and green beans to the pot.
- Reduce heat and simmer for about 30 minutes, or until vegetables are tender and meatballs are cooked through.
