Ingredients

  • 1/2 cup rice
  • 1 egg
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 potato, diced
  • 1 cup green beans, chopped

Instructions

  1. Combine ground beef, rice, egg, mint, onion, garlic, cumin, salt, and pepper in a large bowl. Shape into small meatballs.
  2. Bring beef broth and diced tomatoes to a boil in a large pot.
