- 6 hard-boiled eggs
- 1 ripe avocado
- 1 tablespoon mayonnaise
- 1 teaspoon lime juice
- Salt and pepper to taste
- Paprika for garnish
- Chopped cilantro (optional)
Instructions
- Cut the hard-boiled eggs in half lengthwise and remove the yolks.
- Mash the egg yolks and avocado together in a bowl.
- Add mayonnaise, lime juice, salt, and pepper to the mixture and mix until smooth.
- Spoon or pipe the avocado mixture back into the egg white halves.
- Sprinkle with paprika and cilantro if desired.
- Serve chilled.
Notes
For best storage, keep the egg whites and filling separate until ready to serve.
